Basil Thai Sweet Chili Stir Fry

2 cup medium shrimp OR

2 cup chicken, pork, or beef sliced thin

2 garlic diced garlic cloves

1/4 cup sliced green onions (scallions)

1/2 cup thinly sliced red/orange/yellow bell peppers

1 cup fresh broccoli

1/2 cup sliced carrots

1/4 cup chopped basil leaves

2 tbsp sweet chili sauce

1 tbsp red chili paste (blended … in produce section near herbs)

1 pack rice stick noodles

1 tbsp light soy sauce

2 tbsp rice vinegar

2 tbsp oil

 

Bring water to boil and add rice stick noodles for 3 minutes… Drain and rinse, set aside

 

In wok or large skillet, heat on high heat 2 tbsp oil

add scallions and garlic

add meat and stir for 4-5 minutes

add broccoli and carrots and stir 3 minutes

add sliced bell peppers, sweet chili sauce, rice vinegar, soy sauce, and red chili paste and stir 2 – 3 minutes

add basil leaves and stir 2 minutes

 

Makes 4 servings

 

Place noodles in bowl and add stir fry mixture over noodles

350-400 calories per serving
